Social-distancing and staying at home may be taking its toll on you in many ways, but don’t let your eating habits be an area that suffers. Comfort foods may certainly be appealing at a time like this, however, we all know our bodies need the right nutrition to stay well. So don’t skimp on your vegetables, which should always make up the largest part of your meal.
 
With grocery shopping likely occurring less frequently, be sure to keep plenty of frozen vegetables on hand. I often say that frozen vegetables are one of the greatest inventions! As they are frozen shortly after being harvested, frozen vegetables are often more nutritious than fresh vegetables which may have been sitting around in the grocery store for a while after a possible lengthy transit.
 
While frozen vegetables can certainly be enjoyed steamed or cooked in the microwave, they also taste great roasted. One of my family’s favorite vegetable dishes is roasted frozen broccoli. Besides being yummy and a nutrition power-house, it requires minimum prep and cooks in just twenty minutes (or less)!
 
And if you are looking for a way to satisfy your sweet-tooth while still providing your body proper fuel, try my simple peanut butter Greek yogurt treat.  It makes a great dessert, breakfast, or anytime power snack.
 
Roasted Frozen Broccoli
1 16 oz bag frozen broccoli florets
1 tablespoon extra-virgin olive oil
Salt
Pepper
Directions:
Pre-heat oven to 425 degrees F. Place broccoli in a bowl, add olive oil, and mix well. Sprinkle with salt and pepper to taste. Place broccoli florets on sheet pan in a single layer and roast for 10 minutes. Remove from oven and flip florets for even roasting. Place back in oven for another 10 minutes or until desired doneness. Be sure to watch carefully at the end of the cook time to avoid burning broccoli.
 
Peanut Butter Greek Yogurt Treat
¾-1 cup plain Greek yogurt
1 tablespoon natural peanut butter
1 teaspoon pure maple syrup
1 cup of blueberries (fresh or thawed frozen) or 1 banana (thinly sliced)
Directions:
In a bowl, combine yogurt, peanut butter, and syrup until creamy. Gently mix in fruit. Enjoy!
